On October 8, 2026, the Institute of Nutrition, Mahidol University (INMU), and Food Industry Asia (FIA) hosted a joint seminar titled “From Science to Product Innovation: Practical Pathways for Sugar and Sodium Reformulation.” The session focused on using food science to reduce sugar and sodium in everyday products without sacrificing taste, making healthier choices easier for consumers.
Assoc. Prof. Dr. Chalat Santiwarangkna, INMU Director, opened the event with an overview of Thailand’s current nutrition landscape and policies driving healthier food choices. Experts from the Thai FDA, Mahidol University, the University of Sydney, and SEAFAST presented on sodium benchmarks, sensory testing for reformulated prototypes, and the latest research on non-sugar sweeteners.
The event highlights INMU’s ongoing work with industry partners to foster a healthier, more sustainable food supply.
